High-res DAGGER MAKES A MEAL: spring rolls
This was a perfect post-run meal on Tuesday night. After I exercise I’m never in the mood for something heavy and always crave something fresh tasting. It takes a bit to assemble everything but these are a really rad no-cook meal.
Ingredients:
spring roll wrappers
firm tofu (uncooked)
thin rice noodle (vermicelli)
fresh mint leaves
lettuce
shredded carrots
Instructions

Soak rice paper in water one at a time to soften
Place ingredients in rice paper, wrap, eat!
I had these again last night at a restaurant and they included avocado as well. BONUS JONAS STATUS! So yummy and there’s still time to make these for your super bowl party. (only if you’re having a super classy super bowl party, it’s not recommended that you eat these before or after buffalo wings and your 4th beer.)
